what kind of education or training does an artificial flavor chemist need?

Lots of chemistry.
If you want to be ‘the man’, you will need a PhD. If you want to be a lab assistant, you can get by with a BS. It just depends on how much experiance and school you have. You won’t be walking into a research lab on your first day and runnning the place…no matter what degree you get, you will need some real world experiance.
